I’ve been watching you & want to learn! Am I able to come to you in TN to cook with you? Looks fun! We have loved good ramen since we lived in CT, now we’re in TN also. I have printed out recipes to make it and need to make it since my sons are making that Buldak crap!
I've had Ramen in Japan before, but that's been over 20 years and I just have vague memories of deliciousness. I live in Austin, TX and we have a restaurant called Ramen Tatsuya, and they are probably about as close to "authentic" as I can get now. https://www.ramen-tatsuya.com/menu
