Tonkotsu ramen is the most recognized Japanese ramen style in the world. Walk into any ramen shop in America and tonkotsu is on the menu. It is the bowl that introduced an entire generation of American diners to ramen as a cuisine and not just a packet of noodles. And yet, most people eating it have no idea where it came from, how it got here, or what makes one tonkotsu different from another.
